Fennel Salad with Lemon Dressing – 01/10/2013

A super-simple recipe that showcases fennel, courtesy of Claire’s aunt in New Brunswick who wanted to contribute to our recipe collection.  This is our favourite fennel recipe at the farm: it’s easy and absolutely delicious.

  • 1 fennel
  • 1 garlic clove
  • 1 tsp salt
  • Juice of ½ a fresh lemon
  • ¾ tbsp olive oil
  • Black pepper to taste
  1. Slice your fennel using a mandolin. Keep a bit of leaf (the tastiest, tenderest leaf is near the heart of the fennel) as garnish.
  2. Combine finely diced garlic, salt, lemon juice and olive oil to make a dressing.
  3. Mix with fennel, adding black pepper to taste and diced baby leaf as garnish. Serve immediately.

 

Variation: add a few thin slices of radish or apple (Granny Smith or Cortland)
