The change in the fields is notable: the tomatoes, eggplants and peppers have arrived. This holy vegetable trinity gives everything a new look and feel. From here on in, your baskets will have fewer leafy greens and will weigh more. They are the ultimate trio, vegetables for our favourite summer vegetable dish, ratatouille. Their presence signals summer’s second half, a time of heatwaves and holidays, as we note per our attendance list. That said, no need to rush back from vacation – there will be plenty of tomatoes, eggplants and peppers through August. And, lest we forget to mention it, our sweet corn is just about ready – you should see some in your baskets next week (Week 6). Tomatoes, eggplants, peppers AND corn? Sounds heavenly to us.
