Fennel Salad with Lemon Dressing – 01/10/2013
A super-simple recipe that showcases fennel, courtesy of Claire’s aunt in New Brunswick who wanted to contribute to our recipe collection. This is our favourite fennel recipe at the farm: it’s easy and absolutely delicious.
- 1 fennel
- 1 garlic clove
- 1 tsp salt
- Juice of ½ a fresh lemon
- ¾ tbsp olive oil
- Black pepper to taste

- Slice your fennel using a mandolin. Keep a bit of leaf (the tastiest, tenderest leaf is near the heart of the fennel) as garnish.
- Combine finely diced garlic, salt, lemon juice and olive oil to make a dressing.
- Mix with fennel, adding black pepper to taste and diced baby leaf as garnish. Serve immediately.

Variation: add a few thin slices of radish or apple (Granny Smith or Cortland)
